So I found a flight from MSP-DBX. Would I just fly the flight and file a PIREP like a flight off the simairline timetable? Or how does that work.

You would actually have to file two PIREPs for this flight, one for the MSP-ATL leg and one for the ATL-DXB leg. Everything else is normal, though. You would set your simulator to the correct time (and day, if necessary), fly, then file the PIREP with your times like you normally would.
