You can search for AFCADs on AVSIM for each individual airport.

You can either search for appropriate AFCAD files (Avsim would be a good start), or you can go ahead and edit them yourself. If you get a program called "AFCAD2," and you double click on a gate you can easily assign an airline code to this gate. Make your the airline code matches that in your Aircraft.cfg for your AI traffic, and they will park at the right gates. Keep in mind that ATC won't tell you to taxi to the right gate.

Sermon time! Take notes!

When it comes to parking planes, FS only cares about six things:
1. The parking type for that aircraft
2. The parking code for that aircraft
3. The parking types available at that airport
4. The parking codes, if any, available at that airport
5. Other aircraft parked
6. The size of the parking spot

1 and 2 can be found in the fltsim entries in the aircraft's aircraft.cfg file. The lines are:
ui_parking_types=
ui_parking_codes=

Available parking types are GATE, RAMP, CARGO, MIL_COMBAT, MIL_CARGO, and DOCK. GATE, RAMP, and DOCK are the key types, with CARGO, MIL_COMBAT, and MIL_CARGO being subtypes of RAMP. In FSX, GATE would come with a tug and baggage loading GSE (and if added, a jetway), CARGO comes with only a tug, and the rest don't come with anything at all.

The parking codes are basically the airline's ICAO code. You can have it be whatever you want, really, as it does nothing more than tell FS which particular gate the plane should go. So if the code was, say, ABC, then the plane will go to a gate that has the code ABC. Now, let's talk about regional affiliates. Some people use the regional carrier's ICAO code. Others use Big Momma's ICAO code with an X at the end (ABC -> ABCX). Most people use the latter, though. For my personal use, I use both, but the latter mostly. However, there are some instances where one regional carrier parks their planes at a specific spot compared to the other regional carriers, like Commutair and D77 in PIT. You can combine codes, like "ABC,ZYX" in both the fltsim entry and in the AFCAD, and FS will basically look at the first code, and if nothing's available, go to the second, and on and on and on.

The airport's parking types are found in the AFCAD of that particular airport. There, there are additional types that break down the types into sizes, which are SMALL, MEDIUM, LARGE, and HEAVY. However, they don't really mean much as some prankster could've made SMALL have a radius of 100m (757 size) and HEAVY being 30 (B1900D size), but most, if not all AFCAD creators aren't idiots like that, but size may vary. The key for parking the plane is size. You can't have a 747 park in a 50m-radius parking spot, and a Cessna shouldn't be in a 150m-radius parking spot unless there's nothing else available (more on this later).

For the remaining items on the list...
Planes can't park at a gate that's already taken. But what if all the ABC gates are taken, and an ABC flight just landed? If there's a gate open, but not an ABC gate yet is big enough for the plane, they'll take it regardless. If the gates are too small, or every spot is full, the plane vanishes.
