So with my birthday just passing. I am at the peak of my money that I will be receiving. I have thought up some combos that I might purchase. What's your opinion?

While saving it is always a good option, I recommend that you get the PMDG and REX (no matter what you must get REX, as it will make you unconscious for a few minutes because of how stunning it is). FlyTampa Kai Tak, along with the SAITEK and Track IR 5 can wait IMO.

My suggestion would be to pick one item (I would lean towards the Saitek), and save the rest.

What stick setup have you got at the moment? I was gaming on a really poor Trust joystick, and decided to buy the Saitek Pro X-52 stick. It made a huge difference to my overall flight simulator experience. The yoke should provide an even more realistic FS experience.
Track IR does look very good, and if you game from the VC and have a good PC setup (which I think you have), it will make a nice addition. However, I don't know what it is like to use in general everyday flying (ie. when you are trying to click on buttons but your view keeps moving).
PMDG 747 is a definite buy. 747 + PMDG = perfection.
REX - very good. Adds to FS as a whole as opposed to an aircraft addon or a scenery.
Kai Tak - Very good scenery for Hong Kong, although I would put it at the bottom of the list as you can only use it when flying to Hong Kong, but the others can be used in other situations.
Overall I would go for PMDG + REX. If you do want to go ahead and buy the yoke, definitely go for that.

I'd go for TrackIR definitely. Have always wanted that. Now, if you're willing to mix some of the combos up, I'd put that with FlyTampa Kai Tak, since that's the perfect product to help fly that approach.
